I had a chance to sit down with Zina Lapi of the Blue Balls Food Truck. She is running the first KickStarter campaign in Western New York to get a Food Truck going. As of this writing she has seven days and over fifteen thousand dollars to help raise the money to get this project rolling. We thought that after the Mercado debacle it would be interesting to see just how interested Buffalo would be in another one. We met up with  Zina Lapi, and she was an incredibly gracious host.

“First and foremost, thank you for your support and interest in my Kickstarter campaign and food truck project! Any chance I have to get the word out about The Blue Balls Bus is greatly appreciated!” said Zina.

WGOIB: Why do a Kickstarter for the food truck?

Zina: “In order to make this dream a reality, I realized that I needed help and Kickstarter.com seemed like a perfect opportunity. Even though I have already purchased the miniature school bus, expenses added up and as of right now, it is just an empty shell with a lot of promise. The pledges defray the expenses involved converting the bus into a mobile kitchen especially with the kitchen equipment itself, generators, fryers, refrigeration units, running water etc. plus permits and licensing fees.” she continued “One aspect of kickstarter people love is when they pledge a monetary amount they have a reward associated with their pledge, like receiving free rice balls for a year, or having a Blue Balls Bus party once the truck is fully functional or even getting a ball customized in your name!”

WGOIB: Why Buffalo, NY for your Food Truck?

Zina: “Well I was born and raised in Buffalo and truly love my city. As a classically trained chef, I graduated from Johnson and Wales University with a Culinary Arts and Hospitality Management degree in 2012 after attending campuses in both Miami, FL and Providence, RI. I have honed my culinary skills by working in well-established restaurants such as Meat Market in Miami, Ruth’s Chris Steak House in Providence and Mike A @ Hotel Lafayette here in Buffalo.” She continued “I spent time studying abroad in Florence, Italy. In Italy the sense of family, community and delicious food is overwhelming, and when I returned to Buffalo after graduation I knew I had to find a way to connect these two worlds that have had such an impact on me. Hence my idea for creating a food truck.”

WGOIB: What is this Arancini you mentioned earlier?

Zina: “It’s classic Italian street food “Arancini.” Arancini done the traditional way is a rice ball stuffed with beef, peas and cheese and then breaded and deep fried. I will be taking some of Buffalo’s signature dishes, as well as popular ethnic dishes, deconstructing them, and the putting them into the Arancini format with different garnishes and sauces to accompany each creation.”

WGOIB: With all the other food trucks, why a Arancini?

Zina: Well I love traveling and meeting new people and my inspiration for an Arancini inspired food truck stems from the semester with operating a food truck. You are always out and about town, and this is my chance to bring people together over something that captivated me while abroad.

WGOIB: What kind of menu do you plan on having?

Zina: “Well without divulging too much of what is still to come regarding The Blue Balls Bus menu, one can look forward to trying the Buffalo Chicken Wing Ball, stuffed with homemade buffalo chicken stuffing, topped with a blue cheese vinaigrette, and garnished with shaved celery and carrots.”

Also:

  • Stuffed Banana Pepper Ball which will be stuffed with four cheeses, sautéed banana pepper and sausage stuffing, and garnished with a homemade red sauce and homemade ricotta.
  • Cubano Ball, stuffed with shredded roasted pork loin and Swiss cheese stuffing, paired with a homemade spicy mustard and pickle garnish.
  • French Onion Ball, stuffed with caramelized onion and gruyere cheese stuffing served with an onion brûlée au jus to dip.
  • Peanut Butter and Jam Ball, which consists of crisped rice mixed with a peanut butter frosting shell, homemade strawberry jam that will be served with a shot of milk of course.
  • Foster the Banana Ball, stuffed with caramelized banana rum stuffing, served with a banana Chantilly cream, homemade brown sugar and rum caramel sauce.

The above mentioned are just a sample of the 50+ recipes that will be featured in my ever changing Arancini bus. I take pride in my cooking skills and product, therefore everything that can be homemade or locally bought, will be.     Sounds so good! Best of luck to her… though I doubt she needs it. Sounds like she has more than enough talent and great ideas make this happen!
